Festivals are a different sport — hundreds of covers, a line that never stops, and no room for a slow window. We plan production around the day so the brisket holds all afternoon and the line keeps moving.
The truck is fully self-contained: our own power, water and propane, all permits and inspections current, and a menu tightened for speed without cutting corners on the cook.
Organizers like us because the truck is a draw in itself — wrapped, on-brand, and photographed all day. Put us where the crowd is and we'll help keep them there.
